25 Feb Chicken and Vegetable Pizza
Heres a great idea for all you pizza lovers! Pizza seems to be one of the most mentioned meals missed by many of my clients after adopting the paleo lifestyle, so I thought i’d have a go at something that fits into this wheat free way of life. This pizza is low carb and much higher protein than traditional style pizzas.
Ingredients (makes 2 small pizzas)
For the base
6 eggs
4 heaped tablespoons of coconut flour
4 heaped tablespoons of ground almonds
For the topping
8 tablespoons of tomato puree
1 chicken breast
1 red onion
Half a courgette
4 slices of aubergine
1 red pepper
Grated grass fed unpasturised cheddar cheese
Method
Mix up the eggs with the ground almonds and coconut flour until theres no lumps.
Grease 2 silicone round dishes with coconut oil. You can buy the dishes here.
Spread the mixture evenly between the dishes and bake for 10 mins on gas mark 4 or 176 deg C.
Whist the bases are in the oven griddle the chicken until cooked through, around 5 mins on each side, and grill the aubergine to soften, around 4 mins.
Take the bases out and spread the tomato puree evenly over them.
Chop all the veg and chicken and place over the bases.
Cover with as much cheese as you like.
Bake for 20 mins on gas mark 5 or 190 deg C or until the cheese is browned off.
Serve up with a side salad.
When thinking about getting your daily protein amounts of 1.5g per kg of body weight a day remember each base has 3 eggs in it so these pizza’s are actually quite a good hit of your daily requirements.
