27 Feb Cod on Mashed Veg with Grilled Aubergine
This dish is one of the quickest and tastiest meals. All done including prep in well under 15 minutes.
A good sized cod fillet
1 small leek
150 g of cauliflower
Grass fed butter
A few slices of aubergine
Herbs de Provance
Chop the carrot, parsnip, cauliflower and leek into small pieces and steam for 8 minutes.
Rub the aubergine with coconut oil both sides and grill for 4 minutes each side.
Fry the cod on a low heat for around 4 minutes on each side.
Mash the veg with a good chunk of butter, a sprinkle of the garlic pepper and a shake of the herbs.
Place the cod on top of the mashed veg and serve with the side of grilled aubergine.
